Ripi

Wine obtained from the Penna in Teverina vineyard, harvested in coplantation of Ciliegiolo, Merlot and Cabernet grapes. The land is located at 250 meters above sea level and is clayey with a medium texture. The vineyard is 20 years old, trained on the Guyot system with a yield between 700 and 800 grams per plant. The grapes are harvested manually and collected in 20 kg boxes.

Fermentation is spontaneous and lasts about 6-10 days. After racking, it ages in stainless steel on its fine deposits for about 6 months. After bottling, Ripi remains in our cellars for another 12 months. The annual production is 3,500 / 4,000 bottles.
