05035 Rosé
Obtained from the white vinification of whole cluster Ciliegiolo grapes. The wine shows a pink color with delicate but intense aromas, to the nose citrus notes of pink grapefruit, slightly spicy, with a very pleasing minerality.
It is produced with 100% Ciliegiolo grapes coming from two vineyards planted in San Gemini, the first one in Colle Ozio, the other one in Colle Pizzuto. Soils are located at 230-290 meters above sea level and they are clayey-calcareous with a medium consistency. Vineyards are between 5 and 10 years old and are trained by guyot with a yield between 700 and 800 grams per plant.
Grapes are harvested by hand in 20 kg. crates.
Fermentation is spontaneous and lasts about 20 days. After racking 05035 Ciliegiolo Rosato is aged in stainless steel tanks on its fine deposits at a controlled temperature for about 6 months. After the bottling the wine remains to rest in our cellars for other 1/ 2 months. The annual production varies from 3000/3300 bottles.
