COLLEPIZZUTO
It is the selection of Malvasia grapes from the cellar. The name derives from the toponym of the vineyard located in the municipality of San Gemini.
The wine is made from 100% Malvasia grapes. The soils are located at 270 – 290 meters above sea level and are clayey-limestone. The vineyards are 6 years old and bred on the Guyot system with a yield between 600 and 800 grams per plant. The grapes are harvested manually in 20 kg boxes.
The grapes are left to macerate for a day. Fermentation is spontaneous and lasts about 30 days. After racking, Collepizzuto refines its fine deposits in stainless steel for about 6 months, without temperature control or filtration. After bottling, the wine rests in our cellars for another 6 months. The annual production varies from 2,500/3,500 bottles.
