05035 Ciliegiolo
It is our first red. The name derives from the zip code of Narni.
It is made from 100% Ciliegiolo grapes, coming from two vineyards planted in San Gemini, one in Colle Ozio, the other in Colle Pizzuto. Soils are located at 230 – 290 meters asl, and they are clayey-calcareous of medium consistency. Vineyards are between 5 and 15 years old and are trained by guyot with a yield between 700 and 800 grams per plant. Grapes are harvested by hand and collected in 20 kg. crates.
Fermentation is spontaneous and lasts about 20 days. After racking, the wine is aged in stainless steel on its fine deposits for about 6 months. After bottling, 05035 stays in our cellars for other 1-2 months. The annual production varies from 15.000/20.000 bottles.
